THE KITCHEN

Gigio Palazzo

founder & Chef

Although originally studying economics, Gigio Palazzo’s true passion was food. His culinary journey began in 1991 with the opening of the first Italian restaurant on Patmos. He went on to establish Fatto in Casa in London, serving high-profile clients, and later opened Terramare Café in NYC’s Upper East Side. In 2006, he introduced Palà, named “Best Pizza in Manhattan” by the Daily News. Gigio’s innovation continued with a renowned gluten-free pizza dough developed in 2008. In 2014, he brought his expertise to Costa Rica, founding Mamagui.

Born in Benevento, Italy, Chef Gerardo Giardino began his culinary career at 16, working with Gigio Palazzo. His journey took him from Athens in 2012 to NYC’s Palà Pizza in 2013, and to the Soho House Group in London in 2014, where he became Head Chef at Cecconi’s Pizza Bar. In 2021, Gerardo joined Mamagui in Costa Rica, bringing his passion for crafting authentic Italian dishes to the beautifully renovated El Pueblo building in Nosara.

  • The best gluten free pasta that I've had in a long time. I used to love pasta, before going gluten free, and I couldn't tell the difference with the al dente spaghetti noodles. My girlfriend had the regular pasta and she was very impressed as well. Awesome atmosphere, too,

  • The food was excellent, not just for a small beach town, but for any location. The ingredients are fresh and the pasta and bread were homemade. We ordered really great cocktails to start, followed by some excellent salads. For the main courses, everything was great especially the Tagliatelle with red snapper.
